23rd and Dexter: Holly Bukey

Author’s note: Holly Bukey is the presiding baker at Spinelli’s, near the corner of 23rd and Dexter. During a recent encounter, I asked her who she’d most like to be sitting next to on that bench. Living or dead. Real or fictional. Bukey wanted her mother, who died in 1991, to be sitting next to her. “I think about her every day.” Bukey’s fondest memory of her mother is going out to eat lunch together at the New Saigon on Federal. Bukey has lived in Park Hill since the age of 12. She learned baking from her grandmother. She likes sweets, but won’t eat her own baked goods: “Heck, I’m around that stuff all day.”
